Sodexo, UofL’s dining service provider, is hosting a Farm-to-Table dinner at 7 p.m. The dinner starts with kale and potato soup served in bowls handcrafted by UofL ceramics students. The next dish is escarole salad with black radish, weinsap apples and sage vinaigrette. Apricot wood & pinot grigio smoked cornish hens with a winter medley of squash, zucchini and cherry tomatoes tossed with fresh speatzle round out the main course. For dessert, there will be carmelized pumpkin crème brulé served with homemade cinnamon ice cream and bourbon smoked sugar.
The cost of dinner is $20. Cash or credit sales are subject to 6 percent Kentucky sales tax. UofL students or faculty and staff with meal plans can use flex points or two meal swipes. To attend, people must register here or in person at Ville Grill, located at 3rd Street and Brandeis Avenue.
This is the second year Sodexo has offered a Farm-to-Table dinner.
The company has made a commitment to serve locally grown foods at its UofL dining facilities, and as part of that commitment, it wants to show how an entire, four-course gourmet dinner can be locally sourced, said Charlie Clabaugh, Sodexo’s marketing and sustainability coordinator.
This is a nice event to get everyone together, she said. We also want people to get to know their food a bit more.
Executive chef Melissa Ingram, manager of The Ville Grille, crafted the menu. Ingredients are from area farms including George Gagel Truck Farm, Creation Gardens, Habegger Mennonite Farm, Marksbury Farms, JD Country Milk, Weisenberger Flour Mill, Bourbon Barrel Foods and Gallrein Farms.
Seating for the 100 guests will be at large, family-style tables on the patio. Louisville-based singer-songwriter John Gage, host of Kentucky Homefront on WFPK 91.9, will provide entertainment for the event.
